Sunny Side Up Eggs with Spinach and Mushrooms


Sunny Side Up Eggs with Spinach and Mushrooms 

4 large eggs
2 cups fresh spinach 
1 cup fresh mushrooms 
2 slices Pepper Jack cheese
Salt, pepper, garlic powder

Sauté mushrooms and spinach in skillet with salt, pepper, and garlic powder.  


Place 2 slices cheese on top.  Crack 4 eggs over top in saucepan.

 


Cover and let steam for 3-5 minutes- until cheese melts and egg whites firm.  Serve hot and enjoy!
